Conference Brunch and Dinner



A couple of weeks ago we had General Conference. Marshall and I love the fact that we get to have church at home, stay in our pj's all day and eat delicious food all of the inspiring messages we receive from the leaders of our church. It is our little family tradition to make German Pancakes for the Sunday morning sesh of conference. We love these babies.


We had an equally tasty dinner. French dip, sweet potato fries and salad.


Recipes:

German Pancakes
Ingredients
  • 4 eggs
  • 2/3 cup flour
  • 2/3 cup milk
  • 1/2 tbs. vanilla
  • 2 tbs. butter
  • Lemon
  • Powdered sugar
Directions:
  1. Preheat even to 450 degrees and heavily butter a cast iron skillet, or double this recicpe and bake in a 9x13 inch baking dish (this is what I do)
  2. Beat eggs in mixer. Add flour, milk, vanilla. Pour mixture into buttered skillet or pan. Top mixture with small slices of butter, spread out evenly.
  3. Bake for 15 min. at 450 degrees. Lower to 350 degrees and bake for an additional 10 min.
  4. Top with squeezes of lemon, powdered sugar and any other topping you want. I love adding strawberries and some maple syrup.



French Dip (from Keeping Up Cook Book)
Ingredients
  • 1 (3 lb.) cross rib, rump or eye0of-round beef roast
  • 1 (10 ounce) can beef consomme
  • 1 1/2 Italian dressing packet
  • 1 au jus gravy packet
  • Sliced swiss or provolone
  • hoagie or french rolls
Directions:
  1. Place roast in a crockpot. Whisk ingredients together and pour over roast. Cook on low in the crockpot for 6 to 8 hours, or until you can shred it easily with a fork.
  2. Place shredded meat on rolls and top with cheese. Broil sandwiches open-faced until cheese is melted and rolls are browned. Serve with strained au jus mixture.
