Meatloaf!



Made some meatloaf.




Brown Sugar Meatloaf

Ingredients:
  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 small onion, chopped
  • 1/4 teaspoon ground ginger
  • 3/4 cup bread crumbs

Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5×9 inch loaf pan.
  2. Mix brown sugar and ketchup in a small bowl
  3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
  4. Bake in preheated oven for 1 hour or until juices are clear. Spread brown sugar, ketchup mixture over the top of loaf for the last 20 minutes of baking.

Mashed Potatoes
Ingredients:
  • 4 pounds golden creamer potatoes, peeled and cut into quarters
  • 1 bay leaf
  • Kosher salt and freshly ground black pepper
  • 2 cups heavy cream
  • 3 tablespoons unsalted butter
  • 2 tablespoons chopped chives
Directions:
  1. Put the potatoes into a large pot, add the bay leaf, 2 tablespoons salt, and cover with cold water. 
  2. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. 
  3. Drain them well and remove the bay leaf. 
  4. Meanwhile, heat the cream and butter in a small saucepan. 
  5. Mash cooked potatoes until desired consistency (I just throw into a kitchen aide). 
  6. Add the hot cream and season with salt and pepper. 
  7. Mix together with a spoon and add the chives.



Green Beans:
Ingredients:
  • 1 bunch green beans
  • 1/8 cup toasted pine nuts (sautee with butter and salt on stove top until slightly browned)
  • 2 Tbsp. Olive Oil
  • Lemon Wedge
  • Salt and Pepper to taste


Directions: 
  1. Saute green beans in olive oil for a few minutes. 
  2. Squeeze in lemon, add salt and pepper. Stir in pine nuts. 
  3. Cook an additional 3-5 minutes
