Made some meatloaf.
Brown Sugar Meatloaf
Ingredients:
- 1/2 cup packed brown sugar
- 1/2 cup ketchup
- 1 1/2 pounds lean ground beef
- 3/4 cup milk
- 2 eggs
- 1 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1 small onion, chopped
- 1/4 teaspoon ground ginger
- 3/4 cup bread crumbs
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5×9 inch loaf pan.
- Mix brown sugar and ketchup in a small bowl
- In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
- Bake in preheated oven for 1 hour or until juices are clear. Spread brown sugar, ketchup mixture over the top of loaf for the last 20 minutes of baking.
Mashed Potatoes
Ingredients:
- 4 pounds golden creamer potatoes, peeled and cut into quarters
- 1 bay leaf
- Kosher salt and freshly ground black pepper
- 2 cups heavy cream
- 3 tablespoons unsalted butter
- 2 tablespoons chopped chives
Directions:
- Put the potatoes into a large pot, add the bay leaf, 2 tablespoons salt, and cover with cold water.
- Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes.
- Drain them well and remove the bay leaf.
- Meanwhile, heat the cream and butter in a small saucepan.
- Mash cooked potatoes until desired consistency (I just throw into a kitchen aide).
- Add the hot cream and season with salt and pepper.
- Mix together with a spoon and add the chives.
Green Beans:
Ingredients:- 1 bunch green beans
- 1/8 cup toasted pine nuts (sautee with butter and salt on stove top until slightly browned)
- 2 Tbsp. Olive Oil
- Lemon Wedge
- Salt and Pepper to taste
Directions:
- Saute green beans in olive oil for a few minutes.
- Squeeze in lemon, add salt and pepper. Stir in pine nuts.
- Cook an additional 3-5 minutes
