Cranberry Orange Scones & Mini Melts

Having never made scones, I was a bit nervous when I signed up to make them for a baby shower I helped host over the weekend. So I was relieved at how great these turned out  and that everyone loved them. They were flaky, moist and the fresh orange zest glaze added the perfect amount of sweetness.

I also brought mini melts with a poppy seed drizzle that worked great for a large crowd.

Healthy Eats: Falafel Sandwiches

In the city I've had some pretty bad felafel. The worst, I'd have to say, was from the food truck parked at the corner of our street, which serves up crunchy, dry, and over-salted deep-fried balls of disgrace. But I guess that's not surprising from a truck that also serves "chessburgers" and "sosages."
On the other hand, Crisp in Midtown serves up a tasty felafel ball. This week I decided to try my hand at this Middle Eastern staple and was very pleased with the results. It was delicious! Crispy on the outside, fluffy on the inside, and full of flavor. Stuffed in a pita with tabouli, lettuce, tomato, hummus, and greek yogurt, it's my new favorite healthy eat.

Taco Soup Night!

With Marshall's finals coming up, he doesn't get out much so taco soup night was the highlight of his week. It's pretty pathetic.

Healthy Eats: Black Bean Veggie Burgers



It's been a goal of mine to learn how to make healthy food that actually tastes good. To do this,  I  decided to try a new recipe every week. First up, Homemade Black Bean Veggie Burgers. Simply amazing. Marshall even loved them and this was on a day that he had eaten Five Guys for lunch. I served them with a side of roasted brussel sprouts which neither of us knew we were a fan.

Conference Brunch and Dinner



A couple of weeks ago we had General Conference. Marshall and I love the fact that we get to have church at home, stay in our pj's all day and eat delicious food all of the inspiring messages we receive from the leaders of our church. It is our little family tradition to make German Pancakes for the Sunday morning sesh of conference. We love these babies.


We had an equally tasty dinner. French dip, sweet potato fries and salad.
